CHUUK-- WHAT TO EAT

If you stay at one of the hotels, chances are you'll eat there most of the time. However, there are a few restaurants and dining spots scattered throughout Chuuk and you may be able to find a favorite place if you do some exploring topside. If you plan to shop for your own food, there are a few grocery stores in major cities like Weno. The variety of foods available is somewhat limited, but you'll find enough to satisfy your basic needs.


Local produce items are taro, yams, breadfruit, sweet potatoes and coconut. Proteins are usually fish, crabs, clams and pork. Some meats, like steak, are imported from the U.S. and used in the many Asian-inspired restaurants.

RECIPES:

Chuuk Lagoon Mahi Mahi
Ingredients:
4 Mahi mahi fillets 4/6oz
3 tablespoons honey
3 tablespoons soy sauce
3 tablespoons balsamic vinegar
1 teaspoon grated fresh ginger root
1 clove garlic, crushed or more to taste
2 teaspoons olive oil
Sea salt and pepper to taste
2 tablespoons vegetable oil
Cooking time (10-12 minutes)

In a shallow glass dish, stir together the honey, soy sauce, balsamic vinegar, ginger, garlic and olive oil. Season fish fillets with salt and pepper, and place them into the dish. If the fillets have skin on them, place them skin side down. Cover, and refrigerate for 20 minutes to marinate.

Heat vegetable oil in a large skillet over medium-high heat. Remove fish from the dish, and reserve marinade. Fry fish for 4 to 6 minutes on each side, turning only once, until fish flakes easily with a fork. Remove fillets to a serving platter and keep warm. Pour reserved marinade into the skillet, and heat over medium heat until the mixture reduces to a glaze consistently. Spoon glaze over fish, and serve immediately.
